The April Man B Que was amazing for a number of reasons. The temperature finally reached what non-MBQers might call “grilling weather.” The turnout was excellent. The food was phenomenal. And, to the point of this post, someone finally introduced baking into the Man B Que universe. It was bound to happen. Little did we know it would turn out to be this bad-ass. As such, we feel it’s our duty to share with the world.
This bit of grill MacGuyver-ing comes from MBQ member Lion King. As you can see in the picture, he put some bolts into a Texas muffin pan. What you can’t see is that he covered the muffin pan with a cake pan – that’s where the bolts come in, allowing for a snug fit and a de-facto oven. It’s simple but brilliant, and the results more than lived up to the ingenuity on display. You can do the same with a 5 minute trip to the hardware store.
Wait, do hardware stores sell muffin pans? Okay, two 5 minute trips, then. It’s worth it. Otherwise, this works in the oven, where we must admit most baking is done.
The Setup
- 1 box whole wheat blueberry muffin mix (remove blueberries and topping)
- 2 eggs
- 1/4 c vegetable oil
- 1/2 c Milk
- 1 lb of ground chuck
- Ketchup
- Honey mustard
- Hot sauce
- Cavender’s Greek seasoning
- Lowry’s Seasoning Salt
- 6 toothpicks
- Shredded cheese, to top
Cooking
1. Make 6 equally sized burger balls with the chuck, seasoned with Cavender’s and Lowry’s.
2. Brown the outside in a medium skillet with a little oil. Remove and let cool.
3. Mix the Whole Wheat Blueberry mix with the 2 eggs, 1/4 c of oil, and 1/2
c milk. Whisk until the batter is smooth.
4. Add ketchup, mustard, and hot sauce to taste.
5. Fill the muffin pan muffin spots 1/3 to 1/2 full.
6. Slide a toothpick through each of the burger balls, leaving 1/4-1/2 inch of the toothpick exposed and place the burger balls into their respective spots in the muffin pan, with the exposed side of the toothpick on the bottom, as to keep the burger ball from sinking to the bottom while baking.
7. Pour in the rest of the batter, filling each muffin container and covering the burger balls.
8. Place on grill at medium heat 20-25 minutes or Place in oven at 375 degree
20-25 minutes.
