Chipotle Apple Pie Spice Pork Sliders & Ancho Chile BBQ Sauce

This great and very easy recipe comes from our ManBQue Columbus chapter. Those boys know how to do it up and their two-time “Golden Spatula” winner, Adam “O’douls” Holtzapfel has shared his winning BBQ sauce and sliders with us. Let’s raise a glass (filled with non-alcoholic beer, of course) for this deliciousness.

Chipotle Apple Pie Spice Pork Sliders

The Set-up

1lb Ground Pork
1/2 lb Bacon (ground/chopped)
Chihuahua Cheese
Yellow Mustard
1 Tbsp ground chipotle powder
1 Tsp ground cinnamon
1 Tsp nutmeg
1 Tsp cardamom

Cooking

1. In a bowl mix ground pork and bacon, form into sliders
2. Add a thin layer of mustard on each side of the slider to help spices stick
3. Dip both sides of the sliders in the Chipotle Apple Pie Spice
4. Grill and add top with cheese
5. Serve on Hawaiian roll topped with Ancho Chile BBQ Sauce

 

Ancho Chile BBQ Sauce

The Set-up

1 tablespoon olive oil
1 cup chopped onions
2 garlic cloves, minced
1.5 cups chili sauce
1 cup apple juice
1/3 cup Worcestershire sauce
1/4 cup apple cider vinegar
1 (8-oz). can tomato sauce
2 dried ancho chiles, seeded, chopped
1 Tsp cumin
1 Tsp dry mustard
1/4 Tsp salt
2/3 cup brown sugar

Cooking

1. Soak Ancho Chiles in hot water for 30 minutes
2. Heat oil in medium saucepan over medium-high heat until hot. Add onions and garlic; cook and stir until crisp-tender, about 3 to 4 minutes
3. Add all remaining ingredients; mix well. Bring to a boil. Reduce heat to low; simmer 1 hour or until sauce is of desired consistency, stirring occasionally. (For a thinner sauce, mix in a blender and run through a strainer)
