MANBQUE MEAT STADIUM

Manbque Meat Stadium

The Meat Stadium is an homage to and modeled after the original Soldier Field in Chicago, IL, home to the elite grilling organization known as Manbque. The Meat Stadium was designed on Monday and completed Thursday. The consumption began shortly after the completion. Due to the sheer size of the Meat Stadium, only 25% of the stadium was eaten upon completion. Its design is modelled on the Greco-Roman architectural tradition, with doric columns made of pure beef hotdogs rising above the stands that were made of homemade sausage pieces.

The original concept was designed by renowned food architects, Magoo, Phlipadelphia, and The Godfather. Construction was completed by the Manbque Meat Architecture team of Eric Barker, Efrain Cuevas and Kenneth Tapling.

The Meat Stadium consists of almost 30lbs of meat.

The exterior walls were made of two, 7lb pork loins seasoned with an original Manbque pork rub:

The columns were made from 14 pure beef hot dogs:

The roof above the columns was constructed of 5lbs of beer marinated skirt steak:

The north side wall of the stadium was a 5lb sriracha-caramel meatloaf:

The south side walls are 7 3/4lb Manbque seasoned beef burgers:

The seating area was composed of 7lbs of hand-made Manbque sausage:

The actual field was a bed of romaine lettuce seasoned with a homemade dressing, sour cream lines and candied bacon end zones:

In celebration of their debut album release “Vertical Mass Grave”, Chicago metal trio CZAR have partnered with Cobra Lounge, promoters Unholy Empire and local carnivore aficionados ManBQue to host an evening dedicated to metal, meat and beer while raising money and donations for the Greater Chicago Food Depository. Featuring a live performance by Czar and Of Wolves, the evening also boasts the Unholy Empire djs spinning tunes all night, drink specials and an exclusive, one time only, event menu created by the ManBQue crew. Non-perishable food items and a portion of the door will be donated to charity.

Bloodshot’s Holiday Whiskey Extravaganza w/MANBQUE

Chicago’s own Bloodshot Records announced that it has teamed up with Jim Beam and Founders to host a holiday concert and food drive next Saturday, Dec. 17 at Cobra Lounge.

On tap to play Bloodshot’s Holiday Whiskey Extravaganza are Whitey Morgan and the 78s, Kurt Marschke of Deadstring Brothers and Lydia Loveless.

The food drive will benefit Back of the Yard’s organization Casa Catalina Basic Human Needs Center. Those concertgoers who donate will receive a Bloodshot Records gift.

MANBQUE will be making a special Bloodshot Burger!!!

It’s that time again!!!

The zombies from Manbque,Three Aces and New Holland Brewery present: Ghouls Night Out. Another hauntingly delicious burger paired with an eerily good pumpkin ale. (It’s Halloween people, get in the spirit!)

The Beer:
Ichabod Pumpkin Ale: combining malted barley and real pumpkin with cinnamon and nutmeg in a delicious and inviting brew.

The Burger:
Ghouls Night Burger: ghost chili aioli, house made bacon, candied corn jam, red onion, beef burger, arugula, shredded beef heart, grilled scallions, aged provolone on a brioche bun with a side of beef fat fries and a pumpkin and blood sausage

ManBQue Goes to Riot Fest: An Overview

Riot Fest, for the uninitiated, is an annual punk festival that takes place each fall in Chicago. The festival showcases emerging punk bands of varying subgenres as well as legends, some reuniting just for the occasion.

Since it was founded in 2005, Riot Fest has blossomed from a three-day concert with a largely local audience to a destination festival that attracts punk fans of all ages from countries around the globe. The introduction of Riot Fest East inPhiladelphiain 2011 showed that it’s gotten too big for one city alone.

Riot Fest 2011 boasted over 40 acts including the Descendents, X, ALL, Helmet, Weezer, Suicide Machines, and Cro-mags. Perhaps the year’s most highly-anticipated performance was “Danzig Legacy,” a 100-minute set of tunes from Danzig, Samhain, and the Misfits (With a little help from Doyle Wolfgang von Frankenstein).

ManBQue arrived on the scene in full force. We circled in the pits, we danced, we banged our heads, and we threw up the devil horns and/or middle finger when appropriate. There may have even been a high-five or three. We made it out to nearly every performance throughout the festival, with The Godfather, Ricky Thumbs and The Other Woman providing live tweets every step of the way (at @manbquemusic and @manbque). The Collaboration beer – Chooch Brew- between New Holland Brewing Company, Three Aces, and Man B Que will be released August 25th.

The crews from Three Aces and Man B Que traveled up to Holland Michigan to work with the brewery in creating this special beer which they will be pairing with the Anarchy Burger!

THE BEER

Chooch Brew- a hardcore hopped up amber ale!!!

THE BURGER

Anarchy Burger – beef burger, pretzel bun, sauteed mushrooms, pickled fennel, wild boar bacon, grilled romaine,smoked tomatoes, grilled fresno chili aioli and pickled red onion with beef fat fries tossed with lemon zest and onion ash , roasted bone marrow and tomato jam, fried garlic and hops pickle black garlic aioli.

Elvis Presley will be making a special appearance to help pour beer!!

The Meat:
“Bay of Pigs” burger
Ground pork burger with house made ham, milk braised pork shoulder, gruyere cheese, pickles, golden cap-orange mustard on cuban bread with ropa vieja fries and a garlic and hops pickle.

The Beer:
New Holland Farmhouse Hatter
Farmhouse Ales were traditionally brewed light and refreshing to aid in both hydration and energy. Wheat and Pilsner malts were used to lighten up the body of this Mad Hatter version. It was also fermented hot with a strain of Belgian Saison yeast to develop flavors of green apple, pepper and fresh cut hay

Come out and try the burger that was featured on WGN. YES, WGN! Bozo, Tom Skilling and The Death From Above Burger, you can’t get anymore Chicago than that.

$20 gets you the Death From Above burger (this burger is being exclusively made for this event and this event ONLY) a kick-ass side and a New Holland Golden Cap that was perfectly paired for this burger directly from the guys at New Holland brewery.

The Death From Above burger is an all duck meat patty, topped with a duck egg, bourbon prune jam and coleslaw with apple and spices.

Navy Bean Chili

Two chili recipes in one week, you should feel lucky. This recipe was supposed to be for ‘white’ chili, but my chili didn’t end up looking too white. Alas, it’s called white chili because of the beans that are used, not the end result. So, that makes me feel better. Regardless, the recipe turned out awesome and you can easily switch out the chicken for portobella mushrooms, if you’re a ‘man of the land.’ (We don’t use the word ‘vegetarian’ at Manbque)

This recipe is super easy and super tasty, that’s the Manbque spirit!

Ingredients
1 pound canned navy beans
5 cups chicken stock
4 tablespoons (1/2 stick) butter
1 tablespoon minced garlic
3/4 cup diced onion
1 1/2 cups chopped green chiles (fresh or canned)
1 pound boneless, skinless chicken breasts, finely chopped or portobella mushrooms (man of the land)
1 tablespoon ground cumin
1 tablespoon dried oregano
1 to 2 teaspoons ground black pepper
1/2 teaspoon white pepper
Pinch red pepper flakes
1/2 bunch cilantro leaves, chopped

Directions
Put the beans in large pot with the chicken stock and bring to a boil over high heat.

In a saucepan, heat the butter over medium heat. Add the garlic, onion, and chiles and saute for 5 minutes. Add chile mixture to pot with beans. Add the chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro. Lower the heat to medium and cook, stirring occasionally, for approximately 1 1/4 hours.

Snow Day Chili

Ok, the three essential tools for surviving a snow day trapped inside are (in no particular order) World War 2 documentaries, a large bottle of Makers Mark, a hot chick in a bikini and chili. (Yes, that’s 4 things but you’re supposed to be reading, not doing math. Besides, you got a problem with a hottie in a bikini?) You can go to Best Buy for the documentaries, the corner liquor store for the Makers Mark, Craigslist for the bikini girl, the chili, well, that isn’t as easy. I’ve learned that the best chili or chili recipe isn’t just found somewhere, it’s passed along.

We did the logical thing and turned to our Facebook friends to find a great chili recipe. I wish I had the time and wider arteries to make all of the recipes sent our way. At the end it came down to which recipe sounded like something I would actually make. Our friend, Jennifer Whelen, had a line in her recipe that I couldn’t resist, “also exceptional cold on white bread, while still drunk & sitting on the floor eating by refrigerator light.” We had ourselves a winner.

The next step was making it. Luckily, my great old friend, Mark Slonina, had just bought a fancy new camera and was dying to use it, so, I handed over the difficult task of making a delicious recipe and taking a picture of it over to him. Mark took a great picture and gave us some Manbque-worthy feedback: “I made the chili per the recipe you sent me. It turned out very good and I would make it again for sure. It was stupid easy to make. The only prep work is cutting up the onion and bacon. How easy is that? My old lady bought two cans of chili beans. No soaking or any messing around. The bacon I used was the stuff left over from my brown sugar ham experiment. So the chili was sweet and tangy. Not spicy at all. If the old lady wasn’t eating some I would add siracha to the whole pot. Instead I added it to my bowl. Shredded cheddar and jack cheese with a lil’ sour cream never hurt no one.”

Enjoy!

It's not a hottie in a bikini, but it's just as good.

Ingredients:
4 slices of bacon
1 large onion
1lbs meat of your choice (we made ours with ground beef)
1qt of canned tomatoes
2 cans of dark red kidney beans
1tsp salt
1tsp curry powder
ground pepper
1tbs white vinegar
1tbs brown sugar

Directions:
-Brown bacon, cut in 1\2″ strips
-Saute 1 cup of coarsely chopped onion until golden
-Brown 1 lb. chopped meat
In a large pot, add cooked ingredients plus the canned tomatoes, dark red kidney beans, salt, curry powder, pepper, white vinegar, brown sugar. Simmer until liquid boils down, about 1 hour. Serve over white or brown rice. Even better when reheated. Also exceptional cold on white bread, while still drunk & sitting on the floor eating by refrigerator light.

This guy LOVES the sausage.

This winter Chicago has thrown everything, from blizzards, 6-foot snowdrifts and THUNDERSNOW, just to see fear in our eyes. We’re men, dammit, this doesn’t make us flinch. The only thing that scares us is a cold, empty grill. That’s why at MANBQUE on February 28th, we will face our fear and grill it away!!!

When: February 28th, 7pm-?
Where: Casual Friday’s Urban Cabin (If you’re invited, you know where it is)
Why: Because you need to start doing what men do; grill out in the cold.
