In Chicago, if it’s warmer than 30 degrees we think it’s hot outside. So when we Manbque member Justin Barg (aka GRUNGE!) showed up with his homemade bacon bourbon ice cream on a 40 degree day, we were ready to put some shorts on.
This is the perfect recipe for a hot summer night of grilling and sipping beer.

Wearing a jacket and eating bacon ice cream, MANBQUE!!!
This recipe calls for an ice cream maker, just a heads up…
Ingredients:
- 1 cup of whole milk
- 3 cups of heavy cream
- ¾ cup of sugar
- 4 egg yolks
- 1lb. of bacon
- Brown sugar
- Maple syrup or a bourbon whiskey. (Manbque prefers Makers Mark)
Directions:
1. Preheat oven to 400 degrees. On a baking sheet lined with aluminum foil,
liberally coat the bacon in brown sugar and cook for about 12 minutes.
2. Take bacon off baking sheet and place on a wire rack and let cool up to 1
hour. Once cool, chop into small pieces and set aside.
3. In a saucepan over medium heat, mix the milk, cream, and sugar until
dissolved. Stir occasionally for 8 minutes, or until mixture is hot.
4. Pour the eggs in slowly, making sure to constantly whisk, so as not to
curdle the eggs.
5. Add the bacon and a tablespoon of whiskey or 2 tablespoons of maple
syrup.
6. Continually whisk for 10 minutes, or until you can coat the back of a
spoon.
7. Pour the mixture into a bowl and let it sit for 10 minutes. After 10
minutes, skim off the layer of fat that has accumulated.
8. Pour mixture into ice cream maker and follow the ice cream maker’s
instructions. (for faster results pre-cool the mixture: pour in a bowl and
place in the fridge for a few hours)

Last week yet another theory surfaced trying to explain the purpose of the Stonehenge monument in England. The Manbque Meat Architects were inspired and immediately took action. (Actually lead meat architect, Eric aka Well Hung, came up with the idea and it took some persuading on his part for the rest of the team to jump on board. Good job!)

MEATHENGE was a 2 day undertaking; the first day was a dry-run that fell short of expectations but still yielded great ideas that were key in completing the project.

One of the details that we really wanted to capture was the bright green grass at Stonehenge which we re-created with a kale pesto, courtesy of the mind of AJ aka Meat Coffin.


We needed strong pilars and didn’t want to take a shortcut by simply using ground beef. The original plan called for corn bread wrapped in bacon, which turned out to be a weak idea. So we ended up coming up with Thai spiced corn bread and wrapping it in a homemade Thai sausage that we created.


We wanted something different for the stones that rest on top of the pilars; we chose to use coffee rubbed flank steak.

For the broken, random pieces of rock, we cut up pieces of chuck roast that we marinated in another one of our homemade marinades.

Day two brought an entirely new approach and game plan which resulted in a success that exceeded our expectations.

CHRIS’ “I CAN’T BELIEVE IT’S NOT BEEF” Turkey Burgers

1 lb ground turkey
2 cloves garlic
3 green onions, chopped
1/2 orange bell pepper, chopped
1 serrano pepper, stemmed, seeded, and chopped
2 tbsp fresh thyme
2 tbsp chopped cilantro
2 tsp ground cumin
2 tsp Cajun seasoning
2 tsp hot sauce
Olive oil
Sliced pepper jack cheese
Chopped red lettuce
Whole wheat buns
1. Roll and pack the vegetables and seasoning into the ground turkey.
2. Flatten into about four patties. Drizzle with olive oil.
3. Place on grill or skillet, over medium-high heat, cooking about 5-10 minutes to each side. Use your own judgment. Top with pepper jack and cover with a bowl or lid before removing to melt the cheese. Tastes good on wheat buns or bread with a leaf of red lettuce and brown mustard.

Fuckin Good Flank Steak Recipe

3 lb flank steak
1/3 c soy sauce
3 tbsp worcestershire
1 tsp dry mustard
5 tbsp Dijon mustard
1 tsp ground ginger
1 clove garlic, crushed
Olive oil
1. Mix soy, worcestershire, mustard, Dijon, ginger, and garlic.
2. Place steak in marinade.
3. Remove from marinade and grill over medium-high coals for about 7 minutes per side.
4. Remove, rest, and slice thin across the grain at an angle.

Magoo’s Radish Slaw

1 lb radishes, peeled and coarsely grated
2 scallions, chopped
1/2 onion, sliced thin
2 tbsp ginger, minced
1 tbsp Kosher salt
1 tbsp Vulcan salt
1 tablespoon garlic, minced
1 tsp peppercorns (Sichuan preferred) dry roasted and ground
3 c seasoned rice vinegar
1. Place the radish, scallions, onion, and ginger in a large bowl and toss to mix
2. Place the jar in a sunny spot by a window for 2 to 4 days depending on the temperature, for colder weather allow 4 days; give the jar a shake occasionally to help blend the flavors.
3. It is now ready to use; the pickle will keep indefinitely if well sealed and refrigerated. Serve with a freshly-grilled sausage, like the curry lemon pork sausage we made for the event.

Flipadelphia’s Blue Cheese Stuffed Bacon Burger

2 lb ground beef
3 tsp worcestershire sauce
1 tsp sea salt
1/2 tsp fresh ground black pepper
8oz creamy crumbled blue cheese
1/2 c minced chives
1 tbsp minced garlic
1 tsp ground dry mustard
5 pieces diced bacon, cooked for a few minutes
1. Mix beef and all ingredients EXCEPT blue cheese.
2. Make 6 6oz patties.
3. Halve the patties.
4. Make an indent in each half of the patty.
5. Take the blue cheese and make 6 disc-shaped pieces about 1/4″ thick and 1 1/2″ around.
6. Place disc in indentation in half of patty. Take other half and place on top and knead the edge so patty is sealed.
7. Cook 4 minutes per side to achieve a medium burger, 3 minutes for medium rare.
DO NOT PRESS THE PATTIES
Red Wine Reduction Sauce
1/2 c chicken/beef stock
1/2 c red wine
1/4 tsp salt
1/4 tsp pepper
1 tsp ground thyme
1 tbsp dijon mustard
3 tbsp unsalted butter
1. Mix wine, stock, salt, pepper, and mustard. Bring to a rolling boil for 9 minutes.
2. Reduce the heat to low and simmer for 5 minutes
3.Add butter and thyme until butter is melted and mixed in thoroughly.
4. Remove from heat, let stand for 1 minute. Spoon over each cooked burger.

The Beer:
A robust renovation of the India Pale Ale. Assertive dry-hopping provides an aromatic telltale nose, indicative of the bitter symphony to follow. Bold hop character with lively grapefruit and citrus notes.
20° Plato, 9.4% ABV

Manbque Meat Stadium

The Meat Stadium is an homage to and modeled after the original Soldier Field in Chicago, IL, home to the elite grilling organization known as Manbque. The Meat Stadium was designed on Monday and completed Thursday. The consumption began shortly after the completion. Due to the sheer size of the Meat Stadium, only 25% of the stadium was eaten upon completion. Its design is modelled on the Greco-Roman architectural tradition, with doric columns made of pure beef hotdogs rising above the stands that were made of homemade sausage pieces.
The original concept was designed by renowned food architects, Magoo, Phlipadelphia, and The Godfather. Construction was completed by the Manbque Meat Architecture team of Eric Barker, Efrain Cuevas and Kenneth Tapling.

The Meat Stadium consists of almost 30lbs of meat.

The exterior walls were made of two, 7lb pork loins seasoned with an original Manbque pork rub:

The columns were made from 14 pure beef hot dogs:

The roof above the columns was constructed of 5lbs of beer marinated skirt steak:

The north side wall of the stadium was a 5lb sriracha-caramel meatloaf:

The south side walls are 7 3/4lb Manbque seasoned beef burgers:

The seating area was composed of 7lbs of hand-made Manbque sausage:

The actual field was a bed of romaine lettuce seasoned with a homemade dressing, sour cream lines and candied bacon end zones:

Chicago’s own Bloodshot Records announced that it has teamed up with Jim Beam and Founders to host a holiday concert and food drive next Saturday, Dec. 17 at Cobra Lounge.
On tap to play Bloodshot’s Holiday Whiskey Extravaganza are Whitey Morgan and the 78s, Kurt Marschke of Deadstring Brothers and Lydia Loveless.
The food drive will benefit Back of the Yard’s organization Casa Catalina Basic Human Needs Center. Those concertgoers who donate will receive a Bloodshot Records gift.

Social Distortion at Riot Fest 2011 (photo by Jamie Ludwig)
Riot Fest, for the uninitiated, is an annual punk festival that takes place each fall in Chicago. The festival showcases emerging punk bands of varying subgenres as well as legends, some reuniting just for the occasion.
Since it was founded in 2005, Riot Fest has blossomed from a three-day concert with a largely local audience to a destination festival that attracts punk fans of all ages from countries around the globe. The introduction of Riot Fest East inPhiladelphiain 2011 showed that it’s gotten too big for one city alone.
Riot Fest 2011 boasted over 40 acts including the Descendents, X, ALL, Helmet, Weezer, Suicide Machines, and Cro-mags. Perhaps the year’s most highly-anticipated performance was “Danzig Legacy,” a 100-minute set of tunes from Danzig, Samhain, and the Misfits (With a little help from Doyle Wolfgang von Frankenstein).
ManBQue arrived on the scene in full force. We circled in the pits, we danced, we banged our heads, and we threw up the devil horns and/or middle finger when appropriate. There may have even been a high-five or three. We made it out to nearly every performance throughout the festival, with The Godfather, Ricky Thumbs and The Other Woman providing live tweets every step of the way (at @manbquemusic and @manbque). The crews from Three Aces and Man B Que traveled up to Holland Michigan to work with the brewery in creating this special beer which they will be pairing with the Anarchy Burger!

The Meat:
“Bay of Pigs” burger
Ground pork burger with house made ham, milk braised pork shoulder, gruyere cheese, pickles, golden cap-orange mustard on cuban bread with ropa vieja fries and a garlic and hops pickle.
The Beer:
New Holland Farmhouse Hatter
Farmhouse Ales were traditionally brewed light and refreshing to aid in both hydration and energy. Wheat and Pilsner malts were used to lighten up the body of this Mad Hatter version. It was also fermented hot with a strain of Belgian Saison yeast to develop flavors of green apple, pepper and fresh cut hay
