What the DUCK is that? A fuckin burger, dude.

Come out and try the burger that was featured on WGN. YES, WGN! Bozo, Tom Skilling and The Death From Above Burger, you can’t get anymore Chicago than that.

$20 gets you the Death From Above burger (this burger is being exclusively made for this event and this event ONLY) a kick-ass side and a New Holland Golden Cap that was perfectly paired for this burger directly from the guys at New Holland brewery.

The Death From Above burger is an all duck meat patty, topped with a duck egg, bourbon prune jam and coleslaw with apple and spices.

The side of duck fat fries are topped with duck confit poutine.

Navy Bean Chili

Two chili recipes in one week, you should feel lucky. This recipe was supposed to be for ‘white’ chili, but my chili didn’t end up looking too white. Alas, it’s called white chili because of the beans that are used, not the end result. So, that makes me feel better. Regardless, the recipe turned out awesome and you can easily switch out the chicken for portobella mushrooms, if you’re a ‘man of the land.’ (We don’t use the word ‘vegetarian’ at Manbque)

This recipe is super easy and super tasty, that’s the Manbque spirit!

Ingredients
1 pound canned navy beans
5 cups chicken stock
4 tablespoons (1/2 stick) butter
1 tablespoon minced garlic
3/4 cup diced onion
1 1/2 cups chopped green chiles (fresh or canned)
1 pound boneless, skinless chicken breasts, finely chopped or portobella mushrooms (man of the land)
1 tablespoon ground cumin
1 tablespoon dried oregano
1 to 2 teaspoons ground black pepper
1/2 teaspoon white pepper
Pinch red pepper flakes
1/2 bunch cilantro leaves, chopped

Directions
Put the beans in large pot with the chicken stock and bring to a boil over high heat.

In a saucepan, heat the butter over medium heat. Add the garlic, onion, and chiles and saute for 5 minutes. Add chile mixture to pot with beans. Add the chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro. Lower the heat to medium and cook, stirring occasionally, for approximately 1 1/4 hours.

Snow Day Chili

Ok, the three essential tools for surviving a snow day trapped inside are (in no particular order) World War 2 documentaries, a large bottle of Makers Mark, a hot chick in a bikini and chili. (Yes, that’s 4 things but you’re supposed to be reading, not doing math. Besides, you got a problem with a hottie in a bikini?) You can go to Best Buy for the documentaries, the corner liquor store for the Makers Mark, Craigslist for the bikini girl, the chili, well, that isn’t as easy. I’ve learned that the best chili or chili recipe isn’t just found somewhere, it’s passed along.

We did the logical thing and turned to our Facebook friends to find a great chili recipe. I wish I had the time and wider arteries to make all of the recipes sent our way. At the end it came down to which recipe sounded like something I would actually make. Our friend, Jennifer Whelen, had a line in her recipe that I couldn’t resist, “also exceptional cold on white bread, while still drunk & sitting on the floor eating by refrigerator light.” We had ourselves a winner.

The next step was making it. Luckily, my great old friend, Mark Slonina, had just bought a fancy new camera and was dying to use it, so, I handed over the difficult task of making a delicious recipe and taking a picture of it over to him. Mark took a great picture and gave us some Manbque-worthy feedback: “I made the chili per the recipe you sent me. It turned out very good and I would make it again for sure. It was stupid easy to make. The only prep work is cutting up the onion and bacon. How easy is that? My old lady bought two cans of chili beans. No soaking or any messing around. The bacon I used was the stuff left over from my brown sugar ham experiment. So the chili was sweet and tangy. Not spicy at all. If the old lady wasn’t eating some I would add siracha to the whole pot. Instead I added it to my bowl. Shredded cheddar and jack cheese with a lil’ sour cream never hurt no one.”

It's not a hottie in a bikini, but it's just as good.

Ingredients:
4 slices of bacon
1 large onion
1lbs meat of your choice (we made ours with ground beef)
1qt of canned tomatoes
2 cans of dark red kidney beans
1tsp salt
1tsp curry powder
ground pepper
1tbs white vinegar
1tbs brown sugar

Directions:
-Brown bacon, cut in 1\2″ strips
-Saute 1 cup of coarsely chopped onion until golden
-Brown 1 lb. chopped meat
In a large pot, add cooked ingredients plus the canned tomatoes, dark red kidney beans, salt, curry powder, pepper, white vinegar, brown sugar. Simmer until liquid boils down, about 1 hour. Serve over white or brown rice. Even better when reheated. Also exceptional cold on white bread, while still drunk & sitting on the floor eating by refrigerator light.

This guy LOVES the sausage.

This winter Chicago has thrown everything, from blizzards, 6-foot snowdrifts and THUNDERSNOW, just to see fear in our eyes. We’re men, dammit, this doesn’t make us flinch. The only thing that scares us is a cold, empty grill. That’s why at MANBQUE on February 28th, we will face our fear and grill it away!!!

Where: Casual Friday’s Urban Cabin (If you’re invited, you know where it is)
Why: Because you need to start doing what men do; grill out in the cold.

Chipotle Mac and Cheese

I can sit here and lie by telling you that winter time is the best time for comfort food. Those of you that know me know that comfort food is a year-round thing for me. Perhaps that’s why my jeans feel tighter and my belly gets people to ask when my child is due. Regardless, food was created to be enjoyed and eaten, dammit. It says so in some bible somewhere.

Anyway, this is a recipe from one of my favorite blogs, Homesick Texan. I added an extra chipotle and made this thing a spicy thing of delicious beauty. Enjoy!

Chipotle macaroni and cheese with bacon (adapted from the NY Times)
Ingredients:
2 cups of dry elbow pasta
2 cups of milk
1 cup of cottage cheese
2 chipotle chiles in adobo
1 teaspoon mustard powder
1 clove of garlic, roughly chopped
Pinch of cumin
Salt and black pepper to taste
3 cups of shredded cheese, a mix of cheddar and Monterey Jack
1/4 cup of crumbled cotija cheese (optional, but delicious!)
4 pieces of cooked bacon, chopped
1 tablespoon of butter

Method:
Heat the oven to 375 degrees.

Grease a 9-inch cast-iron skillet or a 9-inch square or round baking pan with the butter. Add the dry pasta.

In a blender, mix together the milk, cottage cheese, chipotle chile, mustard powder, garlic, cumin, salt and black pepper until it’s smooth. Pour mixture over dry pasta and stir until sauce is evenly distributed.

Stir in two cups of the shredded cheese, cover the pan with foil and bake for 30 minutes.

After 30 minutes, remove the foil and stir the macaroni and cheese a couple of times. Top with the remaining 1 cup of shredded cheese and chopped bacon and cook for another 25 minutes uncovered or until brown and bubbling.

Remove from oven, sprinkle with cotija and serve.

New year, new great burgers and beers! Let’s get 2011 started with some new, awesome Manbque burgers paired up perfectly by the beer brains of Hopcast.

Pairing 1:
Manbque says: “Stuffed with Chihuahua cheese, poblano pepper and topped with a sunny-side egg showered in Manbque’s own homemade tomatillo sauce, “La Cruda” burger (‘La Cruda’ means ‘the hangover’ in Spanish. You’re welcome. ) is guaranteed to cure that painful…hunger.”

Hop Cast says: “Dude, ‘La Cruda’ and a Brooklyn Lager. Problem solved.”

Pairing 2:
Manbque says: “Also filled with chihuahua cheese, this monster is topped with marshmallow butter and candied bourbon pecans. I think we’ll call this one the Ghostbusters burger”

Hopcast says: “Have your mommy get you a glass of Left Hand Milk Stout for this dessert burger.”

$15 gets you endless sliders of this month’s burgers and a bottomless glass of the selected beers.

Chicago’s Best Flank Steak!

The original version of this recipe was actually given to me by my friend George Economos over at the Palatine Whole Foods. I added some love to the rub (Insert joke here) and gave it more of a spicy kick, just to call it my own. It’s really easy to make and it comes out unbelievably juicy and delicious. I think flank steak is my new favorite cut of meat!

Ingredients
2 tablespoons brown sugar
1 1/2 tablespoons finely ground dark coffee
2 teaspoons chili powder
2 teaspoons cinnamon
1/4 teaspoon cayenne
2 teaspoons kosher salt
2 1/2 pounds flat iron steaks, each 1 1/4 pounds
2 teaspoons extra-virgin olive oil, plus more for oiling planks

Combine sugar, coffee, chili powder, cayenne and salt. Brush steak(I use my hands because I’m too manly to use a brush) with 2 teaspoons oil; sprinkle all over with coffee rub and press to adhere. Set aside.

Prepare a grill for indirect heat cooking. When very hot, bank coals on one side of grill, leaving one side free of coals; if using a gas grill, turn burner off on one side.

Grill steaks on hot side of grill until just seared, 1 to 2 minutes per side. Transfer steaks to side with no charcoal, keep them as close to the charcoal side with out being directly over; close grill cover and cook until steaks reach desired doneness, 8 to 12 minutes for medium-rare. Rest steaks 10 minutes before slicing.

Beer suggestion: This steak taste great paired with a coffee porter, it really brings out the coffee flavor in both.

It’s that time again where you eat too much, drink too much and probably upset those around you. No, it’s not your wedding night nor Thanksgiving with your in-laws. Nope, it’s the NOVEMBER MAN B QUE!!

As yearly tradition dictates, Joey Grease will be smoking a turkey (then air humping it. No contact will be made, it’s just for a phot op, trust me) and there will be a ton of delicious other meat on the grill.

You’re not in college anymore so it’s no longer acceptable to creep around over-crowded bars looking for a random hook-up or end up blacked out on your buddies couch. You’re a MAN now, come out to MAN B QUE!

NOVEMBER BURGER AND BEER PAIRING EVENT

It’s that time again when the Manbque guys partner up with the Hopcast and Small Bar crew and create another perfect burger and beer pairing!

Burgers/Beers this month:

1. The Ponce De Leon, infused with chocolate mole and smokey hot sauce, then topped with queso fresco and avocado sour cream; this burger smacks your face with flavor. The Ponce De Leon is perfectly pairied with the Goose Island ESB

2. The Stoner: This burger is a flashback to your college dorm, bong days. Filled with smoked gruyere cheese (yeah, SMOKED gruyere), easy jalapeno and topped with bacon peanut butter on a croissant. This is THE cure for your “munchies.” It’s only fitting that The Stoner burger is paired with the Stone Smoked Porter.

$15 gets you all you can eat sliders and glasses of the selected beers.

MANBQUE has partnered up with one of Chicago’s BEST beer bars, The Map Room, to bring you some mouth watering burgers paired with some awesome beers.

Burger 1: The “Hangover” which has bleu cheese, Cholula, Man B Que seasonings inside and is topped with caramelized aged sharp cheddar; paired with Half Acre’s Daisy Cutter beer.

Burger 2: The “Octoburger” which has our own homemade caramel, smoked gouda, Man B Que spices and a roasted peanut outside, topped with cinnamon/butter apples; paired with Half Acre’s Over Ale beer.
